Cinnamon Oat Bake

Bakes, Bakes and more Bakes! Oatmeal is my jam if you already aren’t aware! I found this incredible oatmeal years ago at a little coffee shop in Holland, Michigan. I would go there a couple times a week to get this baked oatmeal and it was sinful to taste!

Now in the days of less sugar and more “natural” ingredients and I started thinking about that delicious bake one morning and tried to re-create it in a healthier way.

I like to keep things simple and I love breakfast that I can make for on-the-go because as a fitness instructor, personal trainer and health coach, my life is on-the-go! I like easy and I like variety!

Without further ado, here’s your recipe! I hope you enjoy!

Ingredients:

  • 2 ripe bananas

  • 1 1/2 cup oats

  • 1/2 cup coconut flour

  • 1 tsp cinnamon

  • 1/4 cup coconut sugar

  • 1 tsp vanilla extract

  • 1/2 cup almond milk

  • 1 egg or flax egg

  • 1/4 tsp baking powder (I use less living in Colorado due to the elevation - so may require more here)

Directions:

  1. Mix all ingredients into blender or food processor.

  2. Pour into greased loaf pan. Sprinkle top with coconut sugar

  3. Bake at 350 degrees for 25 minutes.

If you want to mix it up for a breakfast on the go, I’ve also added a handful of raw almonds and made a protein drizzle.

Protein Drizzle:

  • 1 scoop vanilla plant protein powder

  • 1/2 cup almond or flax milk

  • Stir and drizzle over top of loaf with almonds as pictured above
