Morning Glory Muffins (GF)

We love muffins in our household! They are great for on-the-go, great for packed lunches and I especially love them being pregnant because its my carb fix! My toddler LOVES this and so does my hubby we’ve made about 4 batches in the past 2 weeks! They go fast in this house!

What I do also like is using fruit as a natural sweetener. It makes so much sense and actually you can’t even taste the difference, at least we can’t! It tastes so real and natural and this is really my method when making any sort of snacks or baking.

I’ve made this in a few different combos but one of the best ways is with just whole grain gluten free oats. I’ve tried with steel cut oats and part regular oats, and I’ve also tried with almond flour. Oats win every time!

The other thing I love about these muffins is they have a little crunch with the pumpkin seeds! These are also loaded with nutrients, magnesium and antioxidants so anytime I can add these I do! If you use a food processor they really blend well so my toddler doesn’t even notice them which depends on her mood if she wants to taste seeds or nuts! So I try to just blend it so she doesn’t even notice:)

So now on to our ingredients:

  • 1/3 cup unsalted raw pumpkin seeds

  • 1 cup whole grain gluten free oats

  • 1 egg

  • 1 cored and peeled apple chopped

  • 1 ripe banana

  • 1/2 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/4 tsp baking powder

  • 1 peeled carrot using slices or chopped

  • *optional 2 tsp coconut sugar

Directions:

  1. Preheat Oven to 350 degrees

  2. Peel and chop apple, peel carrot and add to bowl or food processor.

  3. Add in banana, vanilla, baking powder, cinnamon, oats and egg and blend for approx 15-20 seconds or until completely mixed.

  4. Prepare muffin tin with papers. Fill Muffin papers to approx 3/4 of the way full. Makes approx 9 medium-large muffins.

  5. Bake for 20-25 min. Remove and let cool for about 5 minutes. Store in air tight container.
