Almond Joy Chocolate Bites

The only thing I love more than chocolate is chocolate and almonds! So I love creating varieties of “candy” that isn’t going to spike blood sugar and keep the inflammation at bay. The best way to do it is by creating my own snacks rather than buying them so I’m eating less processed foods.

That being said, I’m human and still have cravings SO I LOVE creating new varieties of foods that help with my cravings. I’ve made this in a peanut butter cup before, so I decided to mix it up with some almonds and coconut which turned out to be quite a surprise!

Ingredients:

  • 1 tbsp coconut oil

  • 1/2 cup chocolate chips

  • 3 dates

  • 3/4 cup coconut flakes

  • 1 pinch sea salt

Directions:

  1. Bring water to a boil on the stove. Place glass bowl in boiling water. Add 1/2 cup chocolate chips to glass bowl along with 1 tbsp coconut oil. Keep stirring until fully melted.

  2. Have silicone mini cupcake liners ready to go. While you’re waiting for chocolate, start the filling but place 3/4 cup of coconut flakes with 3 dates and 1/2 tsp vanilla in a food processor. Blend until dates are fully blended with coconut.

  3. Take approx 1 tsp of filling and place into silicone cups. Makes approx 9-12 almond joy cups. Top with two almonds and press firm to make sure they are in the coconut. Spoon melted chocolate over almonds and coconut until they are covered. Approx 1 tsp.

  4. Place in freezer for 5-10 min until firm then enjoy! Store in fridge or freezer!
