Lemon Blueberry Cake

If you’re looking for a breakfast treat or snack that’s light but packs some protein to keep you fueled and full then this is something you need to try! This is gluten free, egg free and offers everything you want in a breakfast.

This was a total accident, as many of my recipes can become! But I was trying to make more high protein breakfasts/meals for myself and the kiddos and this one just hit the spot! I love this for on-the-go and days I really just need a carb and protein breakfast that will really fill me up!

This morning I had after my cardio and before my barre class and I went about 3 hours after barre until lunch as was totally satisfied! Normally I’m eating every few hours because well, I’m always hungry! I think its a symptom of just being super active and having two young kiddos!

I love having easy, healthy, filling snacks on hand for this exact reason. The kids more just picked out the blueberries but I really enjoyed this and continue to make it!

You can do a lot of subs here but I used dairy greek yogurt and I also used plant protein powder. Feel free to use the protein powder of choice, or no protein at all! I’ll give some subs for that.

The key here is starting by mixing the flour which is blending your oats to make to oat flour, adding baking powder and you protein powder if you’re using it.

Once that is fine and blended, I’ll add in my liquids. The lemon juice or fresh squeezed lemon and also the greek yogurt. I start small and keep blending and I’ll add more and more as I go to make sure the the consistency is well-mixed and relatively moist. It can tend to get too dry if you don’t use enough greek yogurt!

Things you’ll need:

  • baking pan (I use a ceramic one that’s about 6x9 but feel free to use an 8x8 because I think either will be fine!

  • Parchment paper

  • Blender/food processor/mixer

Ingredients:

  • 3/4 cup oats

  • 1 cup nonfat/lowfat/full fat greek yogurt or non-dairy if desired. Also depending on your protein powder consistency and amount, you may need to add more so make sure you have enough!

  • 1/4 cup lemon juice or fresh squeezed lemon

  • 1 large scoop or 2 scoops vanilla plant protein powder (or whatever serving size is for the brand you’re using)

  • 1-2 tbsp swerve sweetener or use your own sweetener (monk fruit or powdered sugar is fine too)

  • 1/2 tsp baking soda

  • 1/2-3/4 cup fresh blueberries

Directions:

  1. Blend flours and protein powder with baking soda

  2. add your yogurt and lemon juice

  3. Once its blended nice and smooth pour into parchment lined baking sheet and add blueberries to top. I just pushed each one it at the top so they weren’t squished.

  4. Bake at 350 for 20 minutes

  5. Remove parchment paper from the baking pan and let cool. Cut and serve! Save in the fridge for best and longest freshness!
