Banana Oat Waffles (GF)

I could not LOVE these more! Especially after a good lift session when I’m really craving some carbs and some high protein meals, these are just BOMB!

I love these after workouts or even as snacks frankly. They are so hearty, full of fiber, protein and I love making my raspberry chia jam or chocolate avocado pudding as a dipping sauce. So amazing and will quickly become a favorite of yours and the whole family!

The consistency really makes these waffles and for my waffle maker I really have to grease it so I just use real butter, but use whatever works for you! The key is getting the cook time right and now allowing them to separate after the done light goes off! It takes some refining as every waffle maker is different!

Have a spatula or knife on hand to help peel the batter off the waffle maker just in case! They are very gooey and it does takes some practice so fear not if they don’t turn out perfect the first time! It has taken me about 10x to get this right and I still am off some days. Either way, they are SO tasty and I never let one go to waste because it didn’t look pretty!

They key if finding the right balance of oats to the liquid mixture and with all of the extras in there like banana, cottage cheese and a date, it get a bit sticky!

So here we go for a servings size of 2-3 waffles. Double or triple for more!

Ingredients:

  • 1 cup whole grain Gluten Free oats (I used Natural Grocers bulk version)

  • 1 egg

  • 1 tsp cinnamon

  • 1/4 tsp baking soda

  • 1/2 cup nonfat or half fat cottage cheese

  • 1 ripe medium banana

  • 1 soaked date + a bit of the water (approx 1/4 cup)

  • 1 tsp vanilla extract

Directions:

  1. Soak 1 date in about 1/2 cup water for a minimum of 20 minutes.

  2. While date is soaking, add oats, cinnamon, baking soda, banana, vanilla, cottage cheese and egg. Blend well. Once the date is done soaking add the date and blend until mixture is smooth.

  3. Grease waffle maker (I use butter) but use whatever is your favorite oil! Pour 1/3 of mixture in waffle maker or approx 1/2 cup to make a full waffle. Depending on your waffle maker, I set mine to about 2.5-3 minutes or until you can lift the top of the waffle maker from the bottom without it separating.

  4. Use a fork or knife to help lift the corners of the waffle from the waffle maker. Remove and set to cool. Repeat for other waffles.

  5. Store in fridge for best freshness for 3-4 days or freeze! Enjoy!
