Cauliflower Gnocchi & Tofu Kale Bowl (V) (GF)

I’d say my most favorite find lately has been this pre-packaged cauliflower gnocchi. Now I know what your’re thinking, this is a healthy recipe blog, not a store bought food blog!

However, if you can find things you like that are easy to pair with healthy items like vegetables and your choice of protein, it makes life just a little bit easier. Who does’t want that?

Now this was a find at Trader Joe’s and let me tell you, this will be mission to create this for all of you! I’m so in love with it! I put it into everything and find it to be a very easy add when I’m wanting carbs or something that is pasta-like!

By adding in a veggie, preferably a leafy green veggie its so easy to make this a healthy dish that really incorporates all of your macros. I’ve also added in my own protein, which you can also make depending on what protein you want to use. I’ve used Tofu here but certainly its just as easy to add in chicken here as well. So depending on what you are looking for in terms of a meatless dish or not, you can still create this YOUR way!

First you start by sauteing the cauliflower gnocchi. It comes frozen so I throw it in the pan that way with some olive oil and get to it! Depending on your protein, you may want to start that first or add it in. Since I am using tofu, its takes less time to cook so I can throw that in the pan with the gnocchi or in this case, I had cooked it previously to have proteins on hand. You could do the same with chicken.

Next, determine your seasoning and it kept it super simple here with sea salt and pepper to start and added in some 21 Seasoning Salute from Trader Joe’s. You can add more leave out the Trader Joe’s seasoning but its one I really enjoy.

Lastly, chop your greens and add in your kale to the sauteing dish and finish out the dish by sauteing on low heat until the kale is wilted.

Ingredients:

  • 1 cup Gnocchi or entire package

  • 2 tbsp olive oil

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • 1 bunch dinosaur kale

  • 1 cup cooked Tofu or Chicken

Directions:

  1. Saute frozen cauliflower gnocchi for 5-6 minutes or until they start to soften on medium heat with 1 tbsp olive oil.

  2. Add in tofu with 1 tbsp olive oil, sea salt, black pepper and optional *21 Seasoning Salute from Trader Joe’s OR your preferred seasoning. Continue cooking for another 2-3 minutes

  3. Remove leaves from stems and chop into lengthwise strands and add into saute pan. continue sauteing for another 2-3 minutes covered on LOW

  4. Remove from heat and place into bowl and top with favorite toppings or eat as is! Enjoy!
