Peachy Almond Oats (V) (GF)

I’ll be posting a LOT of oatmeal recipes because that’s my jam. Oats are one food that I’ve had since I was a kid and my mom told then that it would stick to my ribs! LOL While I know anatomy and how food digests and well let’s just say it doesn’t there still is something about oats that keeps me satisfied like no other food!

Throughout the years I’ve used it as fuel for very big runs I’ve had like 1/2 marathons and other training events. By far the best fuel source. Why is that? Because they are loaded with fiber which controls the appetite and blood sugar levels. If you are thinking about eliminating grains think twice about the reason why you may be eliminating them and maybe what grains should be kept in your diet and others that can be eliminated.

Here’s the thing, not all oats are created equal. When I was a kid we had pre-packaged brown sugar and maple and peaches and cream oats which were all amazing and very easy for on=the-go, however they are PACKED with sugar! Not to mention, nothing about those oats are healthy. Even the oats that claim they are “instant” and plain are still processed. ALWAYS ALWAYS ALWAYS go for the plain whole grain old fashioned oats which are little bit bigger and grainier.

You can add so many nutrients to your oats, don’t spoil it by starting off on a bad foot! I’ll be adding so many fun things to my oats throughout the series of oat recipes that I post from cocoa, yogurt, nut butters and more!

Ingredients:

  • 1 cup whole grain gluten free oats

  • 1 cup water

  • 1/2 cup almond milk

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

  • 1/4 tsp cinnamon or nutmeg

  • 1/4 cup raw almonds (or 1 handful chopped)

  • 1/2 cup fresh or frozen (thawed) organic peaches

Directions:

Bring 1 cup water to a boil. Add oats and let simmer. Add in sea salt, and vanilla. Remove from heat and add vanilla and almond milk. Stir and let set until nice and think and creamy! Top with peaches and almonds.
