Crock Pot Crack Nuts

The name is everything!  I couldn't think of a better description for these and this sounded right on!  So this is the easiest nut mix ever to create and it takes literally no prep time at all.  Throw them in the crock pot - or I guess if you have a modern day Insta Pot - and voila!  I'm still stuck in the stone ages and I happen to LOVE my crock post so if you have another means I guess you can just speed up the wait time for the deliciousness!

Strawberry Plant Based Summer Salad

I'm here to admit I've had my fair share of salads and not always excited for salads.  I went though years of dieting and restricting and I think I had a bit too many salads - bland at that - and really just dis-assimilated my taste buds!  However, I now have a new appreciation for them, now that I know what I'm doing and how to structure them!  I also like to add lots of flavor, crunch and fats which makes it that much tastier!

Throughout the summer I want to publish at least 1 summer salad a week that's exciting and new to tempt your taste buds and make it that much more exciting to eat your greens!  Yes, I said exciting to eat your greens!

Roasted Garlic Beet Hummus

Now this beet hummus I've made before but there's something about this particular batch that I really enjoy.  super savory with a tinge of sweetness at the end.  So delicious!  I've been putting it on everything from my salads, to my wraps, to just eating it alone with crackers or veggies.  Its a great thing to have in the fridge for last minute scavenging for food.  At least you know you are eating something that has some nutrients and is heartier than just eating crackers alone or something worse.

V \ GF Lentil & Veggie Stuffed Peppers

So as I mentioned in my Instagram post, I'm not normally a fan of stuffed peppers.  However, it turns out, I really enjoyed this version - as did my husband!  Bonus!

I usually start out with a rough plan of what I want to make.  Meaning, I had all of the base ingredients such as lentils, peppers, onions, garlic, some other veggies and of course, avocado!  However, aside from that, I don't really know what I'm going to make or how it will turn out until I start working in the kitchen.  That's just the way I roll.  No recipes, or if I do use them, I alter them every time.  Its how I express my creativity and I really enjoy the challenge of finding new ways to make healthy foods!

Miso Cod and Roasted Veggies

This recipe was life-changing for me to change my viewpoint of cod.  I mean I've enjoyed some pretty amazing cod at some spectacular restaurants in New York but aside from that, I've never had a thing for it.  I don't do fish often and when I do I don't typically choose cod.  However, because I was cruising the aisle at the local grocer I noticed some frozen wild cod and thought I'd give it a try.  Now this was a challenge because I had to make it tasty!  So I came home, went through all of my spices, oils and etc. and came up with a little marinade concoction that actually turned out to be quite delightful!

y first official day as an entrepreneur began April 3, 2018 - well for the second time but I'll explain that later:)  The day prior I sent back my Corporate owned laptop, badge, phone, credit cards and basically everything I worked for the past 7 years and my safety net.  It was bittersweet.  You see, after my divorce and selling my first retail business this was my first corporate job coming out of that.  It gave me everything, including my financial freedom.  I have a savings, a 401K, investments and a hell of a lot of experience.

Mango Turmeric Super Smoothie

I'm always looking for new smoothie ideas and I love the idea of adding turmeric to a smoothie I just wanted to figure out a way to mask the taste without adding loads of sugar!  The reason I like to use turmeric is because it is one of many ways to reduce inflammation in the body.  And why would one want to do that?  Because inflammation is the main cause for most of the problems we have going on in our bodies.

Loaded Beet Veggie Burgers

Now regardless of if you like beets or not, you absolutely need to try this recipe!  I've made these burgers a couple of different times and typically just make a huge batch of 15 or so burgers and keep a few in the fridge for the week and freeze the rest. They are perfect for on-the-go where you don't have to think about a meal and you know its packed with veggies and nutrients.

Now, what I can say is these things are messy.  Its a bit time consuming, especially if you make a double/triple batch like I do.  However, know it will save you a lot of time throughout the week.

Vegan Lentil Pasta with Almond Tumeric Slaw

Some days I feel like more than others and today I just wanted something healthy and fast.  I scurried through the cabinets and found I had this bag of lentil pasta.  And when I say lentil pasta, I mean made from straight lentils.  So, protein and nutrient rich and also, very dense!  It is one of my favorites when I want a hearty and filling meal that's going to satisfy me for the entire evening.  Well it does that and then some.  Unlike traditional pasta, lentil pasta doesn't have the sugar and processed ingredients so you don't end up feeling hungry 2 hours later.  So not only is it a great filler but it's easy to add in some veggies and whip up a meal that is macro nutrient dense.
